Oysters and Aligote
In Burgundy Aligoté is either poured from a pitcher or served with a generous dollop of cassis as Kir. Yet once in a while this poor cousin from Burgundy gets serious treatment, most notably in the wines of Aubert de Villaine, of Domaine de la Romanée-Conti fame, at Domaine de Villaine.
Jed Steele has produced a crisp, charming 2007 Washington State Aligote under his Shooting Star label, which paired perfectly with a dozen pristine Northwest oysters at Etta’s in Seattle (pictured here). As you would expect from Steele, the wine is not bone dry, but it’s dry enough and downright zesty by American wine standards. At 11 bucks it’s a great deal, but’s it’s a bit of a shame they didn’t go really dry.
